Spinach and Oregano Pie with Rocket

Ingredients

Pies

• 4 eggs

• 150g feta cheese

• 150g cottage cheese

• 200g frozen spinach, thawed

• 20g flaked almonds

• 1 tbsp fresh oregano leaves

• Zest of 1 lemon

• 1 sheet puff pastry (cut into 4 squares)

• Salt and pepper

Salad

• 100g baby rocket leaves

• 2 avocados, diced

• Handful of walnuts, dry roasted

Dressing (mix all ingredients well in a jar)

• 3 tbsp walnut oil

• 1 tbsp lemon juice

• 1 tsp wholegrain mustard

• Little squeeze of honey

• Salt and pepper

Method

Preheat the oven to 200 degrees.

Blend together eggs, cottage cheese and lemon zest until smooth, season to taste, then stir in the crumbled feta and oregano leaves.

Cut the pastry sheet into 4 squares and use them to line 4 large individual ramekins.

Divide the spinach between the ramekins, add the cheese mixture and bake in preheated oven until golden, for approximately 20-25 minutes.

Once cooked, top with toasted sliced almonds and serve warm with the side salad.
