Cult inner west Sydney cafe Happyfield has launched a limited-edition dessert item in partnership with Australian Avocados Foodservice – putting an Australian twist on the viral Dubai Chocolate trend.
The Haberfield hotspot has created a Dubai Chocolate Sundae featuring avocado folded into its pistachio cream.
The dish aims to inspire operators with new ways to showcase avocados on menus this summer.
The Avocado Pistachio Dubai Chocolate Sundae launched on December 9.
Co-owners Jesse Orleans and Chris Theodosi worked closely with Australian Avocados Foodservice to develop the recipe.
The sundae features an avocado cream, made with Hass avocado and pistachio, which is layered between vanilla soft serve and chocolate sauce, finished with crushed kataifi.
It will be available for one month only, as part of the cafe’s rotating specials menu.
Happyfield has also created an Avocado Verde recipe, exclusive to Australian Avocado Foodservice and available directly from its website.
This smoky, zesty avocado sauce made with charred serranos, coriander, lime, tajín and tomatillos encourages chefs to explore avocado beyond traditional dishes.
“Avocados are a staple in Australian cafe culture,” said Jesse Orleans. “We want to inspire other chefs to think beyond avo toast, put it in your sauces, dressings, desserts and drinks.
“It’s such a versatile ingredient and we’re blessed with the freshest local produce.”
